Southwest Grilled Chicken

When I asked my son to help me pick a name for this meal he came up with Chicken ala Monkey and he had this big smile on his face (he thought it was so funny).  But a monkey chicken dish could confuse people so I  went with Southwest Grilled Chicken, which is a simple 30 minute marinated grilled chicken topped with avocado and pico de gallo layered on top of cilantro lime rice.  It seriously is just as good (better) than the picture looks.

 

Chicken and rice is always my go to easy and healthy weeknight meal.  I pair it with a vegetable and know that my kids will gobble it down.  I really can't go wrong with chicken and rice, ever!  It also makes for a great "base" to build upon and layer flavors. If you have a chipotle in your town you are probably too familiar with their iconic cilantro lime rice.  I've been making it for years but lately I feel like it's been perfected.  You can grab that recipe here.

 

 

This is the perfect spring/summer dish.  If you are trying to keep things lighter than this is a definite must have in your dinner lineup.  Because the avocado and pico de gallo have so much flavor it boosts the whole meal.   You can cut up some limes and squeeze fresh lime juice over everything.  For a quick pico de gallo recipe you can use this one but ignore the part about discarding the insides of the tomatoes, just throw it all in a bowl to make things easy!

Ingredients:

1lb chicken breast

 

chicken rub 

¼ tsp cumin

1/8 tsp chili powder

½ tsp salt

¼ tsp pepper

1 tbsp lime juice

2 tbsp olive oil

 

easy pico de gallo

3 tomatoes, chopped

½ white onion, chopped

handful of cilantro, chopped

1 avocado, chopped in thick pieces

1/2 lime, juiced

1/4 lemon, juiced

½ tsp salt + more

 

Cilantro Lime Rice Recipe

 

Instructions:

  1. Trim chicken breast and place both pieces in a Ziploc bag

  2. Using a meat mallet, thin the chicken so they are the same thickness and about ½ inch thick or so (if they are too thick the outside can burn and the inside will be raw)

  3. Add to the bag all the ingredients in the “chicken rub”

  4. Let this sit for 30 minutes

  5. Prepare the pico de gallo and set it aside in the fridge

  6. Prepare the cilantro lime rice using this recipe 

  7. Grab a grill pan and heat it over medium heat with a drizzle of olive oil

  8. Place the chicken breasts on the pan and cook until it looks like the chicken is cooked half way through

  9. Flip and continue cooking until the center is not pink  

  10. Let it sit 10 minutes before serving

  11. Squeeze lime juice over the chicken

  12. Add rice to a bowl, followed by a chicken breast and top it with a big scoop of the avocado pico de gallo
