S'mores Cookie Bars

I want you to think of the most amazing cookies you've ever had.  Got it?  Now, forget about it.  Meet your new best {cookie} friend, the s'mores bar.  Delectable, chewy and gooey, chocolatey, super moist and the best cookie I've ever had, ever, ever, EVER.  When I think of s'mores I think of sitting around a campfire, telling stories, singing songs and enjoying the company of my fellow marshmallow roasters.  But when you can't make that fire this is the next best thing {or maybe it's the first best thing?}!  I've teamed up with my good friend Renee of Renee Clark Designs to bring you a fun little mid-summer treat.



Renee creates beautiful designs, from traditional to modern there's nothing this girl can't do.  She made my daughter's 1st birthday invitations for me and they were adorable!  She recently opened up an Etsy shop and I'm way excited about it because now you can get designs for a steal of a price {yay!}.  She puts so much thought into her designs and you can really tell by looking at them that she takes pride in her work.  The designs are creative, imaginative and down right beautiful and I can't wait to order my next set!



Renee and I wanted to team up together and offer our readers/clients something fun.  We came up with a camping theme.  My son has been so interested in the thought of camping lately {he's 4} because my mom has been going up North a lot lately on some camping adventures.  



Renee created a twist on this idea and she came up with a modern day "glamping" invitation for a birthday party.  Tents, sleeping bags and s'mores bar cookies, seriously the perfect mix.  Can someone please throw this party and invite me?  I'll bring the s'mores bars and good jokes!



If you're new to reading my blog you may have missed previous posts where I talk about my husband and I growing up in Alaska, so I'm no stranger to camping.  Renee and her family are originally from Wisconsin so we've both had our fair share of camping trips growing up.  We know how it's done peeps!  My husband will actually no longer camp in a tent, he has officially boycotted a sleeping bag after too many years of sleeping bag discomfort.  Glamping may just be up his alley {i know these cookies are}!



These s'mores bars are loaded with mouth watering goodies like marshmallows, white chocolate chips, semi-sweet chocolate chips and chunks of graham crackers.  To get that real-life s'mores taste I took out a portion of the flour and replaced it with graham crackers I pulsed finely in my food processor.  Cookies will never be the same.  This is the way it's just meant to be my friends, the graham cracker base is magnifique {kissing fingers motion like the French do}!



I can't tell you how many times I've tried making cookies with marshmallows, a lot, I've tried a lot!  Honestly, it just doesn't work, it turns into a big glob of gooey.  I will say that my Mad Scientist Cookies actually stay in good cooker form, these are the exception.  So when I attempted to make these a little while back my plan was for cookies, but when I pulled them from the oven it was a mess.  I had half the batter left {and I really thought it was pointless by now} but I decided to throw the rest of it in a baking pan, kind of like when they make those pizza cookies at restaurants.  Pulled it from the oven and it actually worked.  Not only did it work but they were delicious!  



When we realized that my camera was taking a burst of 10 photos every time how could we not have fun with it?  If you had to sum us up in a collage of photos than I think this nails it on the head.  Life is way better when you can just have fun and laugh at yourself.  Oh, and eat cookies.  Life is definitely better with cookies.



So here they are, s'mores bars.  Just about the most delicious thing on this planet.  The marshmallows really allow for the chewy, ooey-gooey moist center and they don't dry out after a few days in a container.  So head on over to Renee's Etsy shop, get yourself the cutest little camping invitation, make the s'mores bar cookies and prepare to be the most popular person on the block.  Also, scroll down to see the beautiful recipe card Renee made for me!  When you order the Glamping invitation you'll also get the recipe card as well, just to keep things easy.





1/2 c butter

1/2 c white sugar

1/2 c brown sugar

1/2 tsp vanilla

1 egg

1/2 c graham crackers (about 5 crackers)

1 c flour

1/2 tsp baking soda

1/2 tsp salt

1/3 c white chocolate chips

1/3 c semi sweet mini chocolate chips

1/2 c mini marshmallows

2 graham crackers, rough chopped



Preheat oven to 350.  Line a square baking pan with parchment paper.


Using a mini food processor add the 1/2 c graham crackers and pulse until the consistency is fine, like flour.  Cream butter and sugar on medium speed for 3 minutes.  Add the vanilla and egg, beating well.  In a sepparate bowl combine the flour, graham cracker crumbs, salt and baking soda.  


Add the dry ingredients to the wet along with the white and semi sweet chocolate chips, marshmallows and the 2 graham crackers that were rough chopped.  Mix on low speed until just combined.


Spread the batter evenly into the baking pan, pressing down with your fingers.  


Bake for 20-22 minutes.  Let cool on a wire rack for 1 hour prior to cutting.  Remove the cookies by lifting up on the parchment paper.  Set it on a cutting board and cut into squares.






*Measure the inner width of the baking pan, cut two pieces of parchment paper that are each that width, lay one down and then lay the other going to opposite direction.


*By adding the dry ingredients plus the add-ins all at the same time you cut down on the possibility of overmixing the batter
