Slow Cooker Short Rib Ragu & Linguine

I love short ribs!  They are so easy to slow cook and it's like pot roast on happy pills.  Super tender when they are cooked right.  I love short ribs.  

 

It was worth a repeat.

 

Another great short rib recipe is this braised short ribs, yummmm,  

 

 

If you've never had short ribs you are missing out friend.  First time I had them was at a fancy charity event.  Then I started making them at home and discovered how easy it was to prepare them.  

 

 

 

This short rib ragu is cooked partially in a slow cooker and partially in a stove.  It starts off by putting seared short ribs in a slow cooker, filling the bottom with red wine and then forgetting about them until dinner time.

 

Yessssssss.

 

 

A word of warning.  I know you may want to get wine happy/crazy and just keep dumping more and more in but do not do that.  Resist.  Too much wine and the sauce will be soupy instead of luscious.  

 

I'm just saying, because a friend of mine (cough cough) may or may not have added way too much one time.  

 

 

The friend is me.  I learn from mistakes and help you not to follow.  Ha.

 

 

Once they are out of the slow cooker you want to let them cool, so you don't burn your beautiful hands when you shred up the meat.  The next steps are super simple, all the ingredients go into a pan and simmer for 15 minutes while you cook some linguine pasta.

 

 

It's all topped off with parmigiano cheese!  Didn't think that beautiful dish of pasta was going to be so easy did you?  I love it!  

 

 

Ingredients:

1 package bone in short ribs (about 2 lbs)

200 ml red blend wine (my brand of choice for this is Cocobon)

salt and pepper

3/4 tsp garlic powder

1/2 tsp onion powder

2 c marinara

1 tbsp tomato paste

1-2 ladles of pasta water

8 oz dry pasta

Reserved liquid from the slow cooker

Fresh parmesan cheese

 

Instructions:

  1. Season the short ribs with a few pinches of salt, pepper, 1/2 tsp onion powder and 1/2 tsp of the garlic powder.

  2. Sear all sides on a hot skillet drizzled with olive oil.

  3. Put the short ribs and wine in a slow cooker, cook on low for 8 hours.

  4. Shred up the short ribs when the time is up

  5. In a large shallow pan add the marinara, tomato paste, a pinch of salt and pepper, 1/4 tsp garlic powder and the short ribs

  6. Run the liquid from the slow cooker through a fat separator, adding only the good liquid to the pan

  7. Simmer this on low for 15 minutes.

  8. Meanwhile, cook the pasta per package instructions

  9. Add the pasta and a ladle or two full of pasta water to the sauce

  10. Serve with cheese on top
