Grilled Peach Frozen Yogurt

As a kid I used to spend my summers in New Jersey with my grandparents.  I distinctly remember eating my weight in watermelon and peaches and I was a happy girl in fruit heaven.  The peaches were so fresh and to this day the smell of a ripe peach brings me back to that little white house in White House Station {no joke that's the name of the town, shout out!}.



In the summer I'm trying to think of freezer type treats since it's blazing hot out.  One of my kids favorite things are smoothies so I make a really easy homemade "frozen yogurt".  All it is, is plain yogurt and frozen fruit.  Really the fruit can be fresh or frozen or fresh that you froze once upon a weekend.  Blend everything up and you have a quick and easy snack or dessert.



This is a slightly fancier version of what I typically make.  Grilled peaches and yogurt, blended, then partially frozen and served.  Plus I saved a little of the peach puree to drizzle on top to give it that big burst of fresh peach flavor.  It's like being transported back to Jersey circa 1994, where the humidity takes no prisoners and catching fireflies with your hands was an art form.



1 tbsp butter

1/4 tsp sugar

4 peaches, halved and pits removed

2 c plain regular or greek yogurt



Heat a grill pan (or regular pan if you don't have a grill pan) over medium heat.  Add enough water so it's about 1" deep.  Bring this to a boil and place the peaches in the water, skin side down.  Cook the peaches for 2 minutes, this will help you easily remove the peach skin.  Try peeling one before you take them off the water, if it doesn't budge go another minute.  Don't peel the skin until after you grill the other side!


Empty the water from the pan.  Put it back on the heat and add your butter.  With the flesh side up, sprinkle the sugar over the peaches.  Place the peaches flesh side down onto the grill.  Cook until dark lines have developed 3-5 minutes.


Transfer to a plate and remove the skins.


In a blender add the peaches and blend until smooth.  Reserve 3 tbsp of the puree in a small container and put it in the fridge.  Add the yogurt and blend.  *Put everything in a container and put it in the freezer.  Freeze until it is half frozen (8 hours give or take).  You don't want it to be fully frozen or else it will be rock solid.  Take it out of the freezer, mix around, serve it with some of that reserved peach puree!





**Alternatively you can add a bunch of ice to the blender if you want to use it right away, add enough so it's still enough to scoop.
