Lemon Dijon Potatoes

Lemon dijon potatoes are the perfect mashed potato substitute you've been dreaming of!  They are healthier than mashed potatoes because they are roasted with olive oil, and there is no butter or cream involved.  I love using red potatoes because when you leave the skins on you get such a pretty looking potato side dish (and I love the taste!).  The lemon and dijon together are delicious and it's such a nice change from a traditional potato.



These pair wonderfully with ham.  I served these at Thanksgiving dinner last year and they were a huge hit.  If any of your family members have allergies than you can rest easy knowing that this is a gluten free and dairy free recipe.  My brother has a dairy allergy and he really enjoyed these!



Another great time to serve these is at a BBQ because you can toss them in some foil and throw them on your grill.  Pair it with some chicken drums and grilled asparagus.  Quick and easy.



2 russet potatoes or 4 red potatoes

1 tbsp olive oil

1 tbsp (heaping) Dijon mustard

1/2 lemon, juiced

½ tsp salt


2 cloves garlic, minced



  1. Preheat oven to 400

  2. Spray a baking dish with nonstick spray

  3. Cut up potatoes to desired shape

  4. Mix together all the ingredients

  5. Toss potatoes in the Dijon mixture and transfer to the baking dish

  6. Cover with foil

  7. Remove foil 10 minutes prior to taking out of the oven

  8. Bake until potatoes are fork tender, about 35 minutes
