Kosmic Karma Pizza Mellow Mushroom Copycat

Kosmic Karma pizza is a mashup of all your favorite things you despised as a child but totally adore as an adult.  Spinach, feta, sun-dried tomatoes and pesto makeup this utterly scrumptious and savory pizza pie! It puts a smile on my face to even think about this pizza, it's officially claimed the title as one of my top 5 favorites.  Along with BBQ Chicken Pizza and Caesar salad pizza.  Swoon.  But this particular gem is a copycat of the Kosmic Karma from Mellow Mushroom and I dare say I've hit the nail on the head because it may ever be better then theirs.



If you haven't figured it out by now, pizza is my all time favorite thing!  The possibilities are endless, you can throw anything you want on a pizza and golly gee wiz, it's always good.  Have you ever had a pizza you didn't like?  Ever since we started making our own pizza dough over 5 years ago the concoctions have become endless.  However there was a stint where we ate ham and pineapple on repeat for like a year prior to having kids.  We've evolved since that hammy time.



It starts with a base of red sauce then you follow up with the spinach and sun-dried tomatoes.  This is like a sneaky surprise and attack type of deal, for the kids in the house who may not like those things {heavens to betsy knows I definitely did not}.  But kudos to my children, they are way more adventurous when it comes to food then I ever was.  I wouldn't have touched sun-dried tomatoes with a ten foot pole as a kid and now I'm like nom nom nom gimme all the sun-dried tomatoes!  



After your base is set up lay down your cheeses.  If not one cheese would be amazing this has two cheeses, mozzarella and feta for extra savory salty goodness.  Some super thinly sliced tomatoes top that and in the oven it goes!  The pesto goes on last, but it gets warmed up by the hot pizza.  To get a fancy swirl you'll need to use a squeeze bottle.  Try this Kosmic Karma mellow mushroom copycat pizza out and let me know if it was love at first bite! {punny}.




1 ball of pizza dough (click for recipe)

3 oz fresh spinach/about 1/4 c cooked

2 tbsp sun-dried tomatoes

1 c Victoria brand marinara

2 tbsp tomato paste

1 tomato, sliced thin

1/2 c feta cheese

1 1/2 c mozarella cheese

2 oz jarred pesto

1 tbsp corn meal (optional, for ease of moving pizza to oven)

salt and pepper

1 tbsp butter, melted

1 tbsp grated parmesan cheese



Preheat oven to 475.


Steam the spinach, squeezing out the liquid and chop finely.  Rough chop the sun-dried tomatoes.  Thin slice the tomatoes using a mandoline.  Using a food processor combine the marinara and tomato paste for the perfect pizza sauce base.


Stretch out the dough and place it on a pizza peel sprinkled with corn meal.  In this order add the sauce, spinach, half the feta, sun-dried tomatoes, pinch of salt and pepper, mozzarella cheese, the rest of the feta cheese, sliced tomatoes and another pinch of salt and pepper.


Bake 10 minutes.


Remove from oven and let rest 3 minutes.  Brush the crust with the melted butter and sprinkle the parmesan cheese around the crust.  Drizzle on the pesto and cut into slices.
