Cinco de Mayo is right around the corner!  I've rounded up 14 of my favorite recipes that you can make for Cinco de Mayo.  Whether you are hosting the party at your house or a guest at someone's house these dishes are sure to wow everyone.

 

From enchiladas to margaritas these are some of my favorite mexican inspired dishes!

Pineapple Avocado Salsa |The perfect Cinco de Mayo salsa!  Full of vibrant colors and big bold flavor.  

 

 

Jalapeno Popper Pizza | Jalapeno poppers are way too good!  I always love it when they are at a party as an appetizer.  Thrown on a pizza is no different.  So good.

 

Strawberry Margaritas |These are THE BEST strawberry margaritas!  Super easy to make and even easier to go down.  Made with both fresh and frozen strawberries.  You'll be the talk of the neighborhood if you serve these at your Cinco de Mayo party.

 

 

Perfect Pico De Gallo | Everyone loves a classic pico de gallo!  This is restaurant quality and you definitely want to make this for Cinco de Mayo.  It's also the perfect topping for tacos.

Savory Southwest Crepes | Savory crepes stuffed with guacamole, jack cheese, ham and a fried egg.

 

Skillet Jalapeño Cream Cheese Enchiladas |The easiest enchiladas.  Corn tortillas, shredded chicken and a decadently cheese cream cheese jalapeño sauce.

 

 

Coconut Meat Street Tacos | If you are on a vegan or vegetarian diet these are the perfect tacos for you!  Made with big pieces of young Thai coconut meat they are super refreshing.
