If you live in a town that has a Chipotle than you are probably familiar with their iconic cilantro lime rice. This stuff tastes like it's made from the gods. (I may be exaggerating) But, it's really. really. good. I've been perfecting this recipe for YEARS. You wouldn't believe how different rices and ingredients can make it taste so different.
First of all, the rice of choice is basmati. Hands down this is the rice you want to use. It's not as sticky as jasmine rice. Second, you want to simmer your rice with a bay leaf to get all that delicious aromatics infused in it. Lastly, add your add-ins last. This recipe is so spot on you will be leaving me sweet thank you notes.
Just don't wait. Go make this. Tonight. Then thank me, tomorrow.
2 tsp olive oil
1 c basmati rice, rinsed well
2 c water
1 dried bay leaf
1/4 tsp salt
1-2 tbsp cilantro, chopped
squeeze of lime juice
squeeze of lemon juice
In a small pot heat 2 tsp olive oil over med/low heat and add the rinsed rice
Cook for 2 minutes
Add the water, salt and bay leaf
Bring to a boil
Cover with a lid and turn the heat down to low
Simmer for 15 minutes, checking ocassionally
Add in the lime juice, lemon juice and chopped cilantro
Fluff with a fork and keep lid off the rice until you are ready to serve (so it doesn't continue to steam and get mushy)
