Chicken & Sun-dried Tomato Pasta

Last time we spoke, err, I spoke to you, I mentioned how my son started school.  He LOVES it and as a parent I am thrilled, I prayed all summer long that he would have a great year and the kids in his class would be kind {and I think the big guy heard me and delivered}.  Last year he received the award for gentleness and I was so proud of that little man and how he handles himself at school.  

 

Continuing on with easy school night meals this chicken and sun-dried tomato pasta is quick and easy to whip up.  

 

 

 The beautiful thing about pasta dishes is that you can take the recipes with a grain of salt.  Throw a little or a lot of what you like in it.  I must be on a sun-dried tomato kick because I keep using it in my recipes, remember last week's Kosmic Karma Mellow Mushroom Pizza Copycat?  I think because it gives a simple dinner a little bit of pizzazz, it has that tangy flavor that adds a lot.

 

I can pretty much serve anything to my kids if there is chicken and pasta involved.  It's like they are willing to look past whatever else I toss in their bowls as long as there is some pasta and chicken.  The cream sauce is really light, you don't feel bogged down after eating this but still it's creamy enough to be comforting.
 

 

Here are three reasons why this is the perfect dinner

3.  my kitchen doesn't look like a bomb went off when I make it {it's a trend I can't kick, how about you?}

 

Ingredients:

1/2 lb dry pasta

1lb chicken breasts, cubed

1 tbsp olive oil

1 tbsp butter

1/2 small sweet yellow onion, chopped

2 garlic cloves, minced

4 c fresh spinach leaves

1/4 c sun-dried tomatos

1/2 tsp season all

1/2 tsp salt

1/4 tsp pepper

1/2 c parmesan cheese

2 c chicken broth

1/2 c half and half (more if you like it a little extra creamy and rich)

 

Instructions:

Cut the chicken into bite sized cubes and season it with the salt, pepper and season all.  Add the olive oil and butter to a saute pan over medium/high heat.  Add half of the chicken to the pan.  Cook the chicken until it's no longer pink in the center, transfer to a plate and the repeat with the last half of the chicken.   

 

Boil the pasta until it's al dente, following the package instructions.  Turn the saute pan down to medium/low heat.  Add the onion and garlic and cook for 2-3 minutes, stirring.  Add in the chicken broth and half and half, bring this to a boil and then return heat to low.  

 

Add to the pan the sun-dried tomatoes, pasta noodles and the fresh spinach on top of everything.  Cover the pan with a lid and let the spinach steam for 5 minutes.  Remove the lid and add the parmesan cheese.  Stir everything together and serve!
